Do we owe the Sun King and Versailles for much of our ideas of "high society", and etiquette?
From what I have studied the Sun King and Versailles influenced the future of what was to be considered an "luxury lifestyle". They greatly influenced culture. The idea of "high fashion", of etiquette including the way we write letters comes from France I understand?
Even after the fall of the monarchy, these customs remained with the French. It is often said that France is a source of "high culture"
Most assuredly. Louis the 14th was the supreme master of societal control and manipulation.
The only real threat to his "absolute" control were his nobles. He never succeeded totally in depriving them of their power; but did the next best thing, in chaining them to him with golden chains. I don't think they ever complained very loudly.
He convinced them that the height of anyones ambition was to be resident at Versailles. To achieve this, he employed the best minds, craftsman and artist in Europe, and summoned them from all over Europe in order to embellish his court with the supreme accouterments. This included the ultimate refinement in taste and etiquette.
His reign and rule was I believe the longest of any European monarch in history. And he succeeded admirably. As evidence by the fact that from his time on, France, Paris was and still is the fashion and gourmet cuisine capital of the world. And, has been and still is, the number one tourist destination for the entire globe, including the U.S.
To conclude, I would in a small way contest the validity of your statement, that France is "a" source of "high culture". It is THE source of "high culture".

Irenaeus is the one responsible for naming the four gospels in the 2nd century AD. He wanted them to carry apostolic authority. But scholars have many reasons for doubting his attributions. As the only Jewish authority to survive the fall of the temple, they were in direct competition with Christianity for converts. And the fact that John castigates Jews in general separates it even further from the disciples–John reflects a turn-of-the-1st-century antisemitism, when the Jews were being blamed for the crucifixion rather than the Romans. John's Jesus goes so far as to call the Jews "children of Satan" as if Jesus himself wasn't Jewish! John also espouses the Trinitarianism and the Platonic LOGOS-concept of a more developed, Hellenic church.
If Matthew had been written by the disciple Matthew, why would he copy Mark in bulk? Both Matthew and Luke have the text of Mark embedded in them, plus another source called Q, a sayings list without virgin birth, crucifixion, or resurrection. Q may be much earlier, even Aramaic, but it doesn't appear in Mark or John.
Mark gets the geography of Judea wrong, all four gospels have varying resurrection scenarios, John includes a raft of material not in the synoptics, utterances from the cross vary, and the genealogies of Jesus in Matthew and Luke aren't compatible. The sheer number of supernatural, phantasmagorical anecdotes bely the slow legend-building process of time.
The Hellenic nature of God fathering a son upon a mortal woman (as Zeus often did) betrays a Greek sensibility in Matthew and Luke. Not only was Son of God a Greek motif, the eucharist descends from the Dionysian "partaking of the god". Early tile depictions of a beardless Jesus holding the goblet of transmogrified wine are identical to those of Dionysus. Through the process of syncretism, Christianity absorbed the cannabalistic Dionysians. A Jew would never have had truck with even metaphorically drinking blood–Jews had taboos against blood and "things strangled".
